CINNAMON FRENCH TOAST ROLL-UPS & WHIPPED STRAWBERRY MILK RECIPE
This classic cinnamon French toast rolls-ups & whipped strawberry milk recipe is easy to make, and includes the perfect ingredients to complete a sweet, nutritious, and delicious breakfast.
INGREDIENTS
FOR FRENCH TOAST:
- 2 eggs, beaten to blend
- 1/3 cup vanilla almond milk
- 2 tbsp white sugar
- 1 tsp vanilla extract
- 2 tsps ground cinnamon
- 12 slices soft sandwich bread, crusts cut off
- 2 tbsps butter
- 1 cup of chopped fillings, such as: bananas, blueberries, etc. Maple syrup and icing sugar to top
FOR WHIPPED STRAWBERRY MILK:
- 6 strawberries, cut very small
- 2 tbsp white sugar
- 1 tsp vanilla extract (optional)
- 3/4 cup heavy whipping cream, very cold
- 2 cups 2% milk
FRENCH TOAST TOOLS:
- Knife
- Cutting board
- Rolling pin (or cylindrical glass)
- Bowl
- Plate
- Pan
STRAWBERRY MILK TOOLS:
- Cutting board
- Knife
- Wooden spoon
- Mason jar with lid
- Cup
- Straw (optional)
INSTRUCTIONS
- Beat eggs, almond milk, white sugar, vanilla extract, and ground cinnamon together in a medium bowl and set aside.
- Using a rolling pin, gently roll sandwich bread to flatten it.
- Choose about 1 tbsp of the filling of your choice and place it in a line along the width of the bread.
- Tightly roll the bread, starting at the filling, until the bread is snug around the filling and has formed a cylinder. Using one finger, lightly paint the edges with the egg mix, and press to seal.
- Repeat this process with all bread.
- Dip the rolled bread into the egg mixture, turning to coat evenly.
- Using a non-stick fry pan over medium heat, melt half the butter, and add half the rolls. Cook them about 1 minute each side. Remove from the pan, and add the second tbsp of butter and six rolls.
- Top with syrup and icing sugar.

CAN I USE A DIFFERENT TYPE OF MILK FOR THE WHIPPED STRAWBERRY MILK?
AL: Yes, you can use whatever milk is your favourite!
CAN I USE COCONUT MILK?
AL: You can use coconut milk. I will say, for shaking, it will be a lot more difficult to achieve that whipped consistency with anything other than heavy whipping cream.
CAN I USE A MIXER?
AL: Yes, you can use a mixer, immersion blender, or anything like that; tools will definitely make the whole process easier and faster.
HOW CAN I MAKE THE FRENCH TOAST VEGAN?
AL: To replace the eggs, you can use 1 tbsp of crushed chia seeds, or 1/2 cup silken tofu, blended well. I also recommend using a pinch of nutritional yeast to really give it the eggy flavour. Try that out and let me know how it turns out!
WHAT CAN I USE AS A SUBSTITUTE FOR CINNAMON?
AL: If you are not a big fan of cinnamon, you can use another spice. I would recommend nutmeg, pumpkin pie spice blend – anything like that.
